  • 400 g (14 oz) dried pasta shapes
  • 1 tbsp vegetable oil
  • 1 large red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large courgette (zucchini)
  • 2 cloves garlic
  • 2 x 400 g (2 x 14 oz) tinned chopped tomatoes
  • 120 ml (1/2 cup) double cream
  • 100 g (3 cups) fresh baby spinach
  • 200 g (2 cups) grated cheese (cheddar and mozzarella)

Instructions

  1. Preheat your oven to 190C/375F. Cook pasta according to package instructions but reduce cooking time by one minute; drain well.
  2. Heat vegetable oil in a large frying pan over medium heat. Sauté the chopped onion for about 3-4 minutes until softened.
  3. Add diced red and yellow bell peppers, courgette, minced garlic, salt, pepper, tomato puree, oregano, and thyme. Cook for an additional 2-3 minutes.
  4. Stir in tinned tomatoes and double cream; simmer gently until bubbling.
  5. Combine the cooked pasta and fresh spinach with the sauce in a baking dish.
  6. Top generously with grated cheese and bake for about 20-25 minutes until golden brown.
  7. Garnish with fresh parsley before serving.
