  • 1 large onion, diced
  • 3 large carrots, chopped
  • 4 large potatoes, cut into chunks
  • 1 medium rutabaga or turnip, chopped
  • 4 cups vegetable stock
  • ¼ cup soy sauce or Tamari
  • Fresh herbs (thyme and rosemary)
  • Optional: vegan beef or mushrooms

Instructions

  1. In a large pot, heat oil over high heat. Sear vegan beef or mushrooms until golden; set aside.
  2. Reduce heat to medium; add onion, carrots, and celery. Sweat until softened.
  3. Stir in garlic and flour; cook briefly.
  4. Gradually pour in non-alcoholic stout while stirring.
  5. Add rutabaga, potatoes, cabbage, stock, soy sauce, and seasonings; bring to a boil.
  6. Reduce heat and let simmer until potatoes are tender.
  7. Return seared protein to the pot for the last few minutes of cooking.
  8. Serve hot with fresh garnishes.
