  • 5 ounces whole wheat French bread (cut into small cubes)
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 4 fresh sage leaves (minced)
  • 2 tablespoons dried cranberries (chopped)
  • 3/4 cups chicken broth
  • Salt and pepper to taste
  • Olive oil or butter for roasting

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the minced onion and celery in butter until softened. In a bowl, mix the sautéed vegetables with bread cubes, sage, cranberries, egg, parsley, seasoning, and chicken broth.
  3. Lay the turkey breast skin-side down and generously salt it. Spread the stuffing evenly over the turkey and roll it tightly from one end to the other. Secure the roulade with cooking twine.
  4. Brush the rolled turkey with olive oil or butter and place it on a lined baking sheet. Roast in the oven for about 75 minutes or until the internal temperature reaches 165°F (74°C).
  5. Allow it to rest for 10 minutes before slicing. Serve warm with homemade gravy made from pan drippings.
