  • 1.5 lbs Cornish Hens
  • 1 whole Lemon (quartered)
  • 12 medium Yellow Onions (quartered)
  • 3 whole Carrots (peeled and chopped)
  • 1 lb Baby Gold Yukon Potatoes (halved)
  • Fresh Rosemary and Thyme
  • 6 cloves Minced Garlic
  • 2 tbsp Truffle Oil
  • 4 tbsp Unsalted Butter (melted)
  • 0.5 cup Chicken Stock
  • 0.5 cup White Grape Juice
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • Cracked Black Pepper (to taste)
  • 1 tbsp Minced Rosemary
  • 1 tbsp Minced Tarragon
  • 10 sprigs Thyme Sprigs

Instructions

  1. Preheat oven to 400°F (200°C). Rinse and dry the Cornish hens thoroughly.
  2. In a bowl, mix melted butter, truffle oil, minced garlic, garlic powder, onion powder, minced rosemary, minced tarragon, and cracked black pepper. Rub this mixture all over the hens.
  3. In a roasting pan, combine onions, carrots, potatoes, lemon quarters, and herb sprigs. Place the seasoned hens on top.
  4. Pour chicken stock and white grape juice around the hens. Roast for about an hour until internal temperature reaches at least 165°F (75°C).
  5. Let the hens rest for ten minutes before serving with the roasted vegetables.
