  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice apple vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)
  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas

Instructions

  1. Prepare the peanut sauce by whisking together peanut butter, soy sauce, brown sugar or honey, rice apple vinegar, minced garlic, minced ginger, and sriracha in a bowl. Add water if a thinner consistency is desired.
  2. In a large bowl, mix cooked chicken, coleslaw mix, grated carrot (optional), cilantro, and roasted peanuts. Pour the peanut sauce over the mixture and toss until well combined.
  3. Warm tortillas in the microwave for about 30 seconds to make them pliable.
  4. Divide the filling evenly among the tortillas and roll tightly. Serve immediately.
