  • 1/2 cup Water
  • 6 tbsp Granulated Sugar
  • 1/2 cup Unsalted Butter, melted
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1 cup + 1 tbsp All-Purpose Flour
  • 3 Large Eggs
  • 1/4 cup + 1 tbsp Granulated Sugar
  • 1/2 cup Fresh Lemon Juice
  • 3 tbsp All-Purpose Flour

Instructions

  1. Prepare the cranberry mixture by cooking fresh cranberries with water over medium heat until softened (about 10 minutes). Let cool slightly.
  2. For the shortbread crust, mix melted butter, sugar, vanilla extract, salt, and flour until smooth. Press into a greased baking dish and bake at 350°F (175°C) for 20 minutes until golden brown.
  3. Whisk eggs, sugar, lemon juice, and flour in a separate bowl to make the lemon custard.
  4. Spread the cranberry mixture over the baked crust and pour the lemon custard on top.
  5. Bake at 350°F (175°C) for an additional 25-30 minutes until set but slightly jiggly in the center. Cool completely before chilling in the refrigerator for at least two hours.
