  • Salt and pepper to taste
  • 4 ears of corn, husks and silk removed
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional, for extra heat)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. Prepare the chicken by seasoning cubed chicken breasts with olive oil and spices.
  2. Cook the chicken in a skillet over medium-high heat until golden brown and fully cooked.
  3. Grill or boil corn until tender; cut kernels off the cob.
  4. Mix corn with mayonnaise, sour cream, cheese, cilantro, lime juice, and chili powder.
  5. Cook rice according to package instructions.
  6. Assemble bowls with rice as the base topped with chicken, street corn mixture, black beans, and diced avocado.
