  • 2-inch piece fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro, roughly chopped

Instructions

  1. Rinse lentils until water runs clear. Soak for at least 6 hours.
  2. In a skillet over medium heat, heat oil. Add garlic, ginger, and serrano peppers; sauté for 3 minutes.
  3. Stir in spices and cook for another minute until fragrant.
  4. Add lentils, crushed tomatoes, and coconut milk; stir well. Simmer partially covered for 20-25 minutes until lentils are tender.
