  • 4 large apples, peeled and diced
  • 1/4 cup salted butter, cubed
  • 1 tsp lemon juice
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream softened butter and sugars until smooth. Add vanilla and eggs; mix well.
  3. Combine dry ingredients and gradually add to the wet mixture to form dough. Chill for 30 minutes.
  4. Prepare the apple filling by cooking diced apples with butter and spices until tender; set aside.
  5. Make salted caramel sauce by melting sugar and butter; stir in cream until thickened.
  6. Scoop dough into balls and chill again briefly before rolling in sugar-spice mixture.
  7. Bake until set but slightly underdone in the center.
  8. Once cooled slightly, fill cookies with apple mixture and top with crumble before drizzling with caramel.
