  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 5 tablespoons melted unsalted butter
  • 1/3 cup oil (canola or vegetable)

  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Spread cherry halves on a parchment-lined baking sheet, sprinkle with sugar, and roast for about 10 minutes. Allow cooling.
  2. Lower oven temperature to 325°F and prepare an 8×8 baking pan with non-stick spray and parchment paper.
  3. Sift together flour, cocoa powder, cornstarch, and salt in a bowl.
  4. In another bowl, beat sugar, eggs, and egg yolk until light and fluffy (about 5 minutes).
  5. Mix in melted butter, oil, and vanilla until combined.
  6. Fold dry ingredients into wet ingredients gently to maintain airiness.
  7. Stir in half of the roasted cherries and chocolate chips; mix gently.
  8. Pour batter into prepared pan and bake for 40-50 minutes until edges are set but center is slightly underdone.
