  • 110g coconut oil (or sunflower oil)
  • 170g pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200g all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100g powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a small springform pan.
  2. In a mixing bowl, beat together eggs and brown sugar until light and frothy. Mix in coconut oil, pumpkin puree, vanilla extract, and optional maple syrup until well combined.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually add this mixture to the wet ingredients, stirring gently until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes. Cover lightly with foil and bake for an additional 20 minutes or until a toothpick comes out clean.
