  • 150 g brown sugar
  • 3 eggs
  • 180 ml vegetable oil
  • 400 g pumpkin puree
  • 230 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • ⅛ tsp ground black pepper
  • 150 g unsalted butter
  • 160 g cream cheese
  • 220 g icing sugar
  • orange food color
  • pumpkin seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a bowl, mix white and brown sugars with vegetable oil until blended. Add eggs and vanilla extract; stir in pumpkin puree.
  3. In another bowl, whisk together flour, baking powder, baking soda, and spices.
  4. Gradually add dry ingredients to wet mixture until just combined. Pour batter into the prepared pan.
  5. Bake for approximately 60 minutes or until a toothpick comes out clean. Cool on a wire rack.
  6. For frosting, beat butter and brown sugar until smooth; then add cream cheese and icing sugar until fluffy.
  7. Once cooled, frost the cake generously and top with pumpkin seeds.
