  • 1/2 cup packed brown sugar
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon fine sea salt
  • 1/2 cup very cold salted butter, diced or grated
  • 3/4 cup pumpkin purée
  • 1/3 cup buttermilk (or milk), plus extra for brushing
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons buttermilk (or milk)
  • 1/2 teaspoon vanilla extract
  • optional: 1/4 teaspoon ground cinnamon, ginger or cardamom

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt until well combined.
  3. Cut in the cold diced butter until the mixture resembles coarse crumbs.
  4. Stir in pumpkin purée, buttermilk, and vanilla extract until just combined; avoid over-mixing.
  5. On a floured surface, shape the dough into an 8-inch circle and cut into eight wedges.
  6. Chill the wedges in the freezer for 15 minutes before baking.
  7. Brush the tops with buttermilk and bake for 13-15 minutes until lightly golden.
  8. Allow to cool slightly before drizzling with glaze made from powdered sugar mixed with buttermilk and vanilla.
