  • 3/4 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 1/4 cups canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. Beat butter and both sugars until fluffy. Add pumpkin puree, egg, and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just mixed.
  5. Scoop dough onto prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 13-15 minutes until edges are set but centers remain soft. Cool on wire rack.
  7. For frosting: Beat cream cheese and butter until smooth; mix in vanilla and sifted sugar until well blended.
  8. Frost cooled cookies generously.
