  • 6oz Warm Water
  • 50 Grams Granulated Sugar
  • 2 Tablespoons Browned Butter
  • 1 Large Egg (or substitute with flaxseed meal or applesauce)
  • 1 Tablespoon Dry Milk Powder
  • 1 Teaspoon Salt
  • 5.3oz Pure Pumpkin Puree
  • 1 Tablespoon Pumpkin Pie Spice
  • 406 Grams-468 Grams All-Purpose Flour
  • 150 Grams Brown Sugar
  • 1 1/2 Teaspoon Ground Cinnamon
  • 3oz Browned Butter for frosting
  • 4oz Cream Cheese, softened
  • 2oz Browned Butter, softened
  • 1 Tablespoon Pure Vanilla Extract
  • 2 Tablespoons Heavy Cream
  • 180 Grams Confectioners Sugar

Instructions

  1. Activate the yeast by mixing warm water and sugar, sprinkling in yeast, and letting it sit until foamy.
  2. In a large bowl, combine the activated yeast mixture with browned butter, egg (or substitute), dry milk powder, salt, pumpkin puree, and pumpkin pie spice. Gradually stir in flour until a soft dough forms.
  3. Knead the dough until smooth and let it rise in a warm spot for about an hour or until doubled in size.
  4. Roll out the dough into a rectangle, spread with cinnamon-sugar filling, roll up tightly, and slice into individual rolls.
  5. Allow rolls to rise again for 30 minutes before baking at 350°F (175°C) for 25–27 minutes.
  6. Prepare the frosting while cooling and then frost each roll generously.
