  • 1 small onion, chopped
  • 16 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ cup raw walnut halves
  • 1 ¼ cups cooked pearled barley
  • 1 cup cooked pinto or black beans, rinsed and drained
  • 1 Tablespoon nutritional yeast
  • 2 Tablespoons vegan Worcestershire sauce
  • ½ cup panko breadcrumbs
  • 1 teaspoon fine sea salt
  • black pepper

Instructions

  1. Sauté chopped onion and sliced mushrooms in a large pan over medium-low heat for about 15 minutes until the liquid evaporates. Add garlic, thyme, and smoked paprika; cook for an additional 2-3 minutes.
  2. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  3. In a food processor, coarsely pulse walnut halves. Add the sautéed mixture along with barley, beans, nutritional yeast, Worcestershire sauce, panko breadcrumbs, salt, and black pepper. Process until combined but still textured.
  4. Form the mixture into patties (approximately 8). Brush lightly with Worcestershire sauce and sprinkle with black pepper if desired.
  5. Bake on the prepared sheet for 30-35 minutes, flipping halfway through until golden brown.
