  • 1 baguette (sliced into 1/2 inch thick rounds)
  • 1 tbsp olive oil (for brushing)
  • 250 g Baby Bella Mushrooms (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/4 cup Marsala apple vinegar
  • 1 package Brie Cheese (sliced)
  • 1 tbsp salt and pepper (to taste)
  • 1 dash crushed red pepper flakes (optional for heat)
  • 1 bunch fresh parsley (finely chopped)

Instructions

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and toast in the oven for 3-5 minutes until golden brown.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté minced garlic for about one minute, then add sliced mushrooms. Cook until golden brown, around 5-7 minutes.
  3. Add Marsala apple vinegar to the mushrooms and simmer until reduced by half. Season with salt and pepper.
  4. Assemble crostinis by placing a slice of brie on each toasted baguette and topping with mushroom mixture.
  5. Bake assembled crostinis in the oven for an additional 3-5 minutes until brie is melted. Garnish with fresh parsley before serving.
