  • 2 tablespoons salted butter (for brushing)
  • 3 tablespoons cinnamon sugar

Instructions

  1. Cream together softened butter, brown sugar, and vanilla in a large bowl until light and fluffy. Add eggs one at a time, mixing until smooth.
  2. In a separate bowl, mix flour, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually incorporate into the wet mixture until combined.
  3. Divide dough into halves; roll out to about ¼ inch thick on a floured surface. Use a cookie cutter to create pumpkin shapes.
  4. Freeze cut-out cookies for 15-20 minutes to help maintain their shape during baking.
