  • 1 cup roasted chickpeas (omit for strict keto or paleo)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted

  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (use coconut yogurt for dairy-free)
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Instructions

  1. Marinate the steak: Mix olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add the steak and marinate in the fridge for at least 30 minutes.
  2. Cook the steak: Grill or pan-sear over medium-high heat for 4–5 minutes per side until desired doneness. Rest for 5–10 minutes before slicing.
  3. Make tzatziki: Combine yogurt (or coconut yogurt), grated cucumber, lemon juice, garlic, dill, salt, and pepper in a bowl.
