  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 cup unsalted butter, softened
  • 1/2 cup fresh lemon juice
  • Zest from 2 lemons
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine oats, flour, brown sugar, baking soda, and salt. Mix in softened butter until crumbly.
  3. Press two-thirds of the mixture into a greased 9×13-inch baking pan.
  4. In another bowl, whisk together lemon juice, lemon zest, granulated sugar, cornstarch, and water until smooth. Pour over the crust.
  5. Sprinkle remaining crumble mixture on top of the lemon filling.
  6. Bake for approximately 38 minutes until golden brown. Allow to cool before slicing.
