  • 1 ¼ lbs boneless skinless chicken breast
  • Lemon pepper seasoning
  • 1 teaspoon each: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • 6 cups chicken broth
  • 2 cups fresh spinach
  • ¾ cup orzo (uncooked)
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a pot over medium-high heat. Season chicken with lemon pepper and sear until golden brown (3-4 minutes per side). Remove from heat and let rest before dicing.
  2. In the same pot, add white grape juice to deglaze while scraping up browned bits. Simmer for about 4 minutes.
  3. Add butter, onions, carrots, celery, and garlic; sauté until softened (about 5 minutes).
  4. Stir in dried herbs, hot sauce, Worcestershire sauce, and chicken broth. Bring to a boil; reduce to simmer.
  5. Cook orzo separately according to package instructions.
  6. Once soup is simmered through, lower heat and stir in cream and Parmesan cheese until melted. Add spinach and cook until wilted (2-3 minutes).
  7. Stir in fresh lemon juice before serving over cooked orzo.
