  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper to create the dry rub. Coat the chicken evenly with this mixture.
  3. In an oven-safe pan over medium heat, sear the seasoned chicken until browned on both sides. Remove chicken and set aside.
  4. Sauté chopped cabbage in the same pan for 2–3 minutes until slightly wilted.
  5. Add sliced potatoes and onions to the pan along with chicken stock. Stir gently to combine.
  6. Return the seared chicken to the pan on top of the vegetable mixture.
  7. Bake in the preheated oven for about 45–50 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
