  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can refried beans (16 oz)
  • 1 can red enchilada sauce (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray two baking sheets with non-stick spray and arrange three tortillas on each sheet. Bake for 3-5 minutes until golden and crispy, flipping halfway through.
  2. In a skillet over medium-high heat, cook the ground beef until browned. Drain excess fat, then mix in taco seasoning and water. Bring to a boil, then simmer on medium-low for about 10 minutes.
  3. Warm refried beans in the microwave for 1-2 minutes until heated through. Spread a thin layer on one tortilla.
  4. Layer with seasoned beef and another tortilla; repeat the process.
  5. Spread enchilada sauce over the top tortilla and sprinkle with both cheeses.
  6. Add diced tomatoes, green onions, and black olives as toppings.
  7. Bake for an additional 5 minutes until everything is melted and bubbly.
