  • 2 Eggs
  • ¾ Cup Sugar
  • 1 Cup Brown Sugar
  • 1 Cup Pureed Pumpkin
  • 1 Cup Dairy Free Milk (like coconut)
  • 2 Cups Gluten Free All Purpose Flour
  • 3 tsp. Baking Powder
  • 1 tsp. Xanthan Gum
  • 1 tsp. Pumpkin Pie Spice
  • 1 tsp. Cinnamon
  • ¼ tsp. Nutmeg
  • Dash of Salt
  • 2 Cups Powdered Sugar
  • 1 ½ tsp. Vanilla
  • ½ tsp. Cinnamon
  • ½ tsp. Maple Extract
  • ½ TBSP Coconut Milk (any dairy free milk will do)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk eggs, sugars, vanilla, pumpkin puree, and dairy-free milk until smooth.
  3. In another bowl, mix gluten-free flour, baking powder, xanthan gum, pumpkin pie spice, salt, cinnamon, and nutmeg.
  4. Gradually combine dry ingredients into wet ingredients until just mixed.
  5. Grease a donut pan and fill each cavity about ¾ full.
  6. Bake for about 20 minutes or until a toothpick comes out clean.
  7. Allow cooling before glazing with a mixture of powdered sugar, vanilla, cinnamon, maple extract, and coconut milk.
