  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tbsp Flour + 3 tbsp Water (for béchamel)
  • Fresh Parsley (chopped)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tsp Sugar
  • 1 tbsp Garlic Powder
  • 1 tbsp Smoked Paprika
  • 1/2 tsp Nutmeg

Instructions

  1. Thinly slice onions and caramelize them slowly in olive oil over medium heat for about 30–40 minutes until golden brown. Add beef broth if needed.
  2. In the same skillet, create a béchamel sauce by whisking flour into melted butter; gradually add heavy cream until thickened.
  3. Mix two-thirds of the caramelized onions into the sauce along with salt, pepper, parsley, and Parmesan cheese.
  4. Cook cavatappi macaroni in salted water until just under al dente.
  5. Combine cooked pasta with the sauce and transfer to a baking dish. Top with remaining onions and breadcrumbs.
  6. Bake at 350°F (175°C) for 10–15 minutes until golden brown.
