  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup chicken broth
  • Salt & pepper (to taste)

Instructions

  1. In a Dutch oven or soup pot, heat olive oil over medium-high heat. Sauté chopped onion for about 5 minutes until soft.
  2. Add ground turkey to the pot and cook for about 5 minutes, breaking it apart as it browns.
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper. Cook for 1 minute.
  4. Add red kidney beans and Rotel tomatoes with their juices. Pour in chicken broth to combine. Bring to a gentle boil.
  5. Reduce heat and simmer uncovered for 15-20 minutes, stirring occasionally.
  6. Adjust seasoning with salt and pepper before serving hot with your choice of toppings.
