  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices
  • 6.5 oz turkey pepperoni
  • 1 cup canned artichoke hearts
  • 2 cups cherry tomatoes
  • 1 cup olives
  • ½ cup pepperoncini
  • 8 oz mozzarella pearls
  • ¼ cup red onion
  • â…“ cup fresh basil
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions. Drain and cool completely.
  2. While the pasta cools, whisk together olive oil, apple cider vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper to create the vinaigrette.
  3. Chop turkey slices and pepperoni into bite-sized pieces; halve cherry tomatoes and slice olives and red onion.
  4. In a large bowl, combine cooled pasta with all salad ingredients and pour over desired vinaigrette. Toss until evenly coated.
  5. Chill for at least 30 minutes before serving to enhance flavors.
