  • ¼ teaspoon turmeric
  • ⅛ teaspoon cayenne pepper
  • 1 cup uncooked long grain white rice
  • 1 medium zucchini, coarsely grated (about 1½ cups)
  • 2 cups chicken broth
  • Tzatziki sauce
  • Pita bread
  • Fresh herbs (dill, basil, parsley, or chives)
  • Fresh lemon

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In the baking dish, combine diced chicken with lemon juice, olive oil, and spices. Allow to marinate for 30 minutes.
  3. Stir in uncooked rice, grated zucchini, and chicken broth until well mixed.
  4. Cover tightly with foil and bake for 40 minutes; check for doneness and add an additional 5-10 minutes if necessary.
  5. Fluff the rice with a fork before serving topped with tzatziki sauce and fresh herbs.
