  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry (chopped)
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • â…” cup cornstarch
  • 1 tbsp butter
  • Pinch of salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. Prepare kataifi pastry by whisking together flour, cornstarch, sugar, and salt in a bowl. Combine vegetable oil and water to create a smooth batter.
  2. Heat a nonstick pan over medium-low heat and pipe long strands of the batter onto the surface. Cook for about 30–45 seconds until set but pale. Remove and cover to keep pliable.
  3. Melt white chocolate and double cream together until smooth in a microwave-safe bowl. Blend ground pistachios with salt into a paste and mix into the melted chocolate.
  4. Toast kataifi strands in melted butter until golden and crispy; mix with the pistachio cream filling.
  5. Chill the mixture for about an hour, then roll into balls.
  6. Dip each ball into melted milk chocolate, allowing excess to drip off before garnishing with coarsely chopped pistachios.
  7. Refrigerate until set before serving.
