  • 1 cup buttermilk
  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup heavy cream
  • 2 teaspoons unflavored powdered vegan gelatin
  • 1/2 teaspoon peppermint extract
  • 1/2 cup Andes peppermint crunch baking bits
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Cream butter and sugars until fluffy.
  2. Beat in eggs, vanilla extract, and buttermilk.
  3. In another bowl, whisk flour, cocoa powder, baking soda, and salt. Gradually add to wet ingredients until just combined.
  4. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  5. For the mousse, melt white chocolate, whip heavy cream to stiff peaks, then fold in melted chocolate, vegan gelatin, and peppermint extract.
  6. After cakes cool completely, slice each layer in half horizontally if desired. Spread mousse between layers and on top of the cake.
  7. Finish with whipped cream and sprinkle with candy cane bits.
