  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Bring a pot of salted water to boil, then add carrot rounds and cook for 10–12 minutes until fork-tender. Drain and cool slightly.
  3. Place boiled carrots on the baking sheet and smash each round gently with the bottom of a glass until flattened.
  4. Drizzle with olive oil, sprinkle with garlic powder, smoked paprika, salt, pepper, and grated Parmesan. Toss gently to coat.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until edges are golden brown.
  6. Garnish with fresh parsley before serving.
