Ingredients

Scale
  • 3 cups cooked rice (preferably day-old)
  • 1 pound salmon
  • 2 cups Persian cucumbers
  • 2 medium avocados
  • 1 cup edamame
  • 3/4 cup green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon chili crisp
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/4 cup olive oil
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • 1/2 teaspoon kosher salt

Instructions

  1. Prepare the Rice: In a non-stick pan over medium heat, add oil and day-old cooked rice. Cook until golden brown on one side before flipping to achieve crispiness.
  2. Cook the Salmon: Season salmon fillets with sea salt, black pepper, and garlic powder. Sear in olive oil skin-side down until crispy, then flip to cook through.
  3. Prep Veggies: Chop cucumbers, green onions, and avocados while rice and salmon cook.
  4. Make the Dressing: Whisk together soy sauce, sesame oil, chili crisp, olive oil, toasted sesame oil, rice vinegar, honey, ground ginger, sea salt, and kosher salt in a bowl.
  5. Assemble Salad: In a large bowl or platter, layer crispy rice as the base. Top with flaked salmon, avocado slices, cucumbers, edamame, and green onions. Drizzle with creamy dressing.
