  • 2 tablespoons butter
  • 1 large sweet onion (peeled and chopped)
  • 34 cloves garlic (minced)
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 7 ounces chopped green chiles
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese (cut into cubes)

Instructions

  1. Sauté the onion in melted butter over medium heat for about 5 minutes until translucent. Add garlic, cumin, oregano, and cilantro; cook for another minute.
  2. Add chicken breasts and chicken broth to the pot. Simmer covered for about 20 minutes until chicken is cooked through.
  3. Remove chicken, shred it with two forks, and return it to the pot along with beans, green chiles, corn, and cream cheese. Stir until well combined.
  4. Simmer on low heat for an additional 5–10 minutes before serving hot with garnishes.
