  • 2 Tbsp avocado oil
  • 1/2 tsp sea salt (plus more to taste)
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 1 (16-oz) jar roasted red peppers, drained
  • 1 (15-oz) can full-fat coconut milk
  • Optional: 1 cup cherry tomatoes, 5 ounces baby spinach

Instructions

  1. Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Sauté the chopped onion until translucent.
  2. Add minced garlic and cook for another minute. Stir in the roasted red peppers and cook for an additional couple of minutes.
  3. Transfer the mixture to a blender, add coconut milk and sea salt, then blend until smooth.
  4. In the same skillet, heat the remaining avocado oil over medium-high heat. Season salmon with garlic powder, paprika, and sea salt before cooking skin-side down for about four minutes per side until golden brown.
  5. Once cooked through, pour the creamy sauce over the salmon and let it simmer briefly.
  6. If using cherry tomatoes or spinach, add them just until warmed through before serving.
