  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook tortellini according to package instructions; drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil and brown the beef sirloin for about 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, sauté the bell pepper, onion, and garlic until softened (5–7 minutes).
  4. In a separate saucepan, melt butter over medium heat and whisk in flour to create a roux, cooking for about a minute. Gradually add milk while whisking until thickened (3–4 minutes). Stir in provolone and Parmesan until smooth.
