  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and nutmeg until well combined.
  3. Gently fold in the flour, baking powder, baking soda until just combined; do not overmix.
  4. Pour two-thirds of the batter into the prepared pan and smooth out.
  5. In another bowl, mix cream cheese with granulated sugar and flour until smooth; spread evenly over the batter.
  6. Pour the remaining batter on top and smooth gently.
  7. Bake for about 48 minutes until golden brown; let cool in the pan for 15 minutes before transferring to a wire rack.
