Ingredients

  • 6 cups vegetable stock (or chicken stock)
  • 1 cup uncooked wild rice
  • 8 ounces baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 large sweet potato, peeled and diced
  • 1 small white onion, peeled and diced
  • 1 bay leaf
  • 1 ½ tablespoons Old Bay seasoning
  • 1 (14-ounce) can unsweetened coconut milk
  • 2 large handfuls of kale, roughly chopped

Instructions

  1. Sauté onion, garlic, carrots, and celery in a splash of vegetable stock over medium heat until tender.
  2. Add sweet potatoes and mushrooms; cook until softened.
  3. Pour in vegetable stock along with uncooked wild rice, bay leaf, and Old Bay seasoning; bring to a gentle boil then reduce heat.
  4. Cover and simmer for about 45 minutes or until rice is tender.
  5. Stir in coconut milk and kale; cook for an additional few minutes.
  6. Season to taste with salt and pepper before serving.
