  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper until softened, about 3-4 minutes.
  3. Add chopped spinach to the skillet and cook until wilted, around 2-3 minutes. Season with garlic powder, salt, and pepper; set aside to cool slightly.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth.
  5. Fold in the sautéed vegetables along with Italian seasoning, salt, and pepper.
  6. Grease a 9-inch pie dish and pour in the mixture evenly.
  7. Bake for about 40–45 minutes until golden brown on top and set in the center.
  8. Allow to cool for 5–10 minutes before slicing and serving.
