  • 1 cup orzo pasta (or any small pasta shape)
  • 6 cups water (or vegetable/chicken stock)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic, oregano, crushed red pepper flakes (if using), salt, and black pepper; cook for another minute.
  3. Add pureed tomatoes and tomato paste; stir to combine and let simmer for about 5 minutes.
  4. Pour in the water (or stock) and bring to a boil. Add orzo pasta and cook according to package instructions until al dente (approximately 7-10 minutes).
  5. Taste and adjust seasoning as needed. Serve topped with fresh herbs or crumbled feta if desired.
