  • 1/2 cup powdered sugar
  • 8 oz mascarpone
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup alcohol-free vanilla extract
  • 1 tsp cinnamon
  • 24 ladyfingers

Instructions

  1. Separate egg yolks and whisk with powdered sugar until pale.
  2. Combine egg mixture with mascarpone, coconut cream, and half of the coconut milk until smooth.
  3. In another bowl, whip heavy cream with remaining powdered sugar until stiff peaks form.
  4. Gently fold whipped cream into mascarpone mixture.
  5. Chill the cream mixture while preparing the soaking mixture by combining condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon in a large bowl.
  6. Dip ladyfingers briefly into the soaking mixture and layer them in your dish.
  7. Spread half of the cream mixture over the ladyfingers and sprinkle with coconut flakes.
  8. Repeat layers with remaining ingredients and top with cinnamon dusting.
  9. Refrigerate for at least 12 hours before serving.
