  • ½ cup vegetable oil
  • ¾ cup sour cream
  • ¾ cup heavy cream
  • 4 eggs
  • 1 box chocolate cake mix
  • ¼ cup cocoa powder
  • 2 cups cold butter (for frosting)
  • 10 cups powdered sugar
  • Green gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, mix vegetable oil, sour cream, heavy cream, and eggs until smooth. Add chocolate cake mix, cocoa powder, and optional espresso powder; stir until just combined.
  2. Line a cupcake pan with liners and fill each about two-thirds full with batter. Bake for around 15 minutes or until a toothpick inserted comes out clean. Cool completely.
  3. For the frosting, beat cold butter until creamy, then gradually add powdered sugar at low speed. Mix in heavy cream, vanilla extract, and salt; beat on high until fluffy. Add green gel food coloring to achieve desired color.
  4. Frost cooled cupcakes using a piping bag fitted with an M tip to create tree shapes. Decorate with golden star sprinkles and holiday sprinkles.
