  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallows crème
  • 2 cups semi-sweet chocolate chips (for topping)
  • 2 tablespoons coconut oil or butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time followed by the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt; then gradually mix into wet ingredients until just combined.
  5. Fold in chocolate chips and spread the mixture evenly into the prepared baking dish.
  6. Bake for 20-25 minutes until golden brown; allow to cool completely.
  7. Spread vegan marshmallows crème over the cooled cookie base.
  8. Melt semi-sweet chocolate chips with coconut oil in intervals until smooth; pour over marshmallow layer and spread evenly.
  9. Let set at room temperature or refrigerate until firm before cutting into squares.
