  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter, softened
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 1/4 cup sugar (for custard)
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Add beaten eggs and knead until smooth.
  2. Gradually incorporate softened butter and knead until dense and slightly sticky.
  3. Cover the dough and let it rise for about 2 hours until doubled in size.
  4. Prepare vanilla custard by heating milk and butter with a split vanilla pod. Whisk egg yolks, sugar, cornstarch, and pour milk mixture gradually.
  5. Cook until thickened; refrigerate until cool.
  6. Roll out the dough, spread cooled custard, sprinkle chocolate chips, fold over, cut into pieces.
  7. Let rise for another 2 hours on parchment-lined tray.
  8. Preheat oven to 350°F (180°C). Brush with an egg wash before baking for about 10-12 minutes until golden brown.
  9. Prepare sugar syrup with water and sugar; brush over warm brioches.
