  • 1 cup sliced carrots
  • 1 cup chopped onion

  • 2 cups diced Yukon gold potatoes
  • 3 cups low-sodium chicken broth
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried rosemary
  • 1/2 cup milk of choice
  • 1 tablespoon fresh parsley (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, celery, carrots, and garlic; sauté until soft.
  2. Add chicken breasts and half of the chicken broth; simmer until chicken is cooked through.
  3. Stir in remaining broth and diced potatoes along with seasonings; simmer until potatoes are tender.
