  • 1/2 cup granulated sugar
  • 1 large egg

  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add dry ingredients to the wet mixture and mix until just combined.
  5. In another bowl, combine ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips.
  6. Roll cookie dough into 1-inch balls and coat in a mixture of granulated sugar and cinnamon.
  7. Flatten each ball on the baking sheet with the bottom of a glass.
  8. Bake for about 10-12 minutes or until edges are lightly golden.
  9. Cool cookies on a wire rack before spreading ricotta filling between two cookies to form sandwiches.
