  • ½ cup diced celery (about 1 rib)
  • ½ red bell pepper (seeded, diced)
  • 2 teaspoons garlic (minced)
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes (peeled, cubed)
  • ½ cup (119 g) heavy whipping cream (or coconut cream)
  • 1 cup (113 g) mild cheddar cheese (or nutritional yeast)
  • Parsley (chopped for garnish)

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add sliced turkey sausage and cook until browned.
  2. Stir in diced onion, celery, red bell pepper, and minced garlic; sauté until tender, about 5-7 minutes.
  3. Add Cajun seasoning, salt, black pepper, paprika, and cayenne; mix well.
  4. Pour in chicken broth and bring to a boil. Add cubed potatoes and reduce heat to low; simmer until tender, about 20 minutes.
  5. Stir in heavy cream and shredded cheese until melted and smooth.
  6. Serve hot, garnished with parsley.
