  • 3 stalks green onions (or chives)
  • 2 tablespoons sesame seeds (or chopped nuts)
  • 2 cloves garlic (minced)
  • 1/4 cup orange juice (freshly squeezed)
  • 1 tablespoon orange zest
  • 1/4 cup soy sauce (low-sodium preferred)
  • 2 tablespoons sesame oil
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon rice vinegar (or apple cider vinegar)

Instructions

  1. Prepare the rice according to package instructions and let it cool completely.
  2. In a small bowl, whisk together minced garlic, orange juice, orange zest, soy sauce, sesame oil, honey, rice vinegar, salt, and canola oil for the dressing.
  3. In a large mixing bowl, combine cooled brown rice with shredded chicken (or protein of choice), shredded carrot, baby bok choy, thawed peas, cilantro, green onions, and sesame seeds. Toss gently.
