Bourbon Peach Roasted Salmon is a delightful dish that combines the sweetness of fresh peaches with the rich flavors of marinated salmon, creating a gourmet experience right at home. This easy recipe features succulent salmon fillets coated in a luscious marinade that caramelizes beautifully as it bakes, resulting in a visually stunning and delicious meal.

  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon coarse ground mustard
  • 4 salmon filets (about 1½ pounds)
  • 2 medium peaches (thinly sliced)
  • Fresh parsley (for garnish)

Instructions

  1. In a medium bowl, mix together peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Reserve half for later.
  2. Place salmon fillets in a resealable bag and pour in half of the marinade. Seal and coat well; refrigerate for at least 30 minutes.
  3. Preheat oven to 375°F. Heat an oven-safe skillet over medium-high heat with some oil.
  4. Sear salmon skin-side up for 2-3 minutes until golden brown; flip and sear skin-side down.
  5. Add sliced peaches to the skillet and cook for another couple of minutes.
  6. Pour in reserved marinade over the salmon and peaches.
  7. Transfer to the oven and bake for 12-15 minutes until salmon reaches an internal temperature of 145°F.
  8. Serve immediately with fresh parsley as garnish.
