  • 1 ½ pounds sweet potatoes, cubed
  • 4 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • Sea salt and pepper to taste
  • 1 ½ cups green and red peppers, chopped
  • 14.5 ounces black beans, rinsed and drained
  • ½ cup frozen corn, thawed
  • For the sauce: honey, lime juice, fresh cilantro

Instructions

  1. Preheat oven to 425°F.
  2. In a bowl, mix spices (cumin, paprika, garlic powder, onion powder, coriander) with salt and pepper.
  3. Toss sweet potatoes with olive oil and spice mix until well-coated.
  4. Spread sweet potatoes on a greased baking sheet and roast for 20 minutes.
  5. Meanwhile, toss peppers with remaining olive oil and seasonings.
  6. After the first roasting period, add peppers to the sweet potatoes and roast for another 20 minutes.
  7. Mix honey, lime juice, and cilantro for the sauce.
  8. Add corn and black beans to veggies; drizzle with sauce and stir gently.
  9. Roast for an additional 10–15 minutes until everything is warmed through.
