Ingredients

  • 150 g granulated sugar
  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat the oven to 180°C (350°F). Peel and thinly slice the apples. In a bowl, combine apple slices with sugar, salt, and cornstarch.
  2. Transfer the apple mixture into a baking dish and bake for about 40 minutes until soft.
  3. In a saucepan over medium heat, warm the milk and sugar. In another bowl, whisk together egg yolks and cornstarch until smooth. Gradually add warm milk to this mixture while stirring continuously.
  4. Return everything to the saucepan and cook gently until thickened. Stir in vanilla bean paste.
  5. Layer cooled apple filling and custard in a mold until all ingredients are used up. Chill for at least an hour before serving.
